The first course will feature Oysters prepared with 58 year Sherry Vinegar and piquillo peppers. The second course is a Wild Mushroom soup with black truffles. For the main course, there is an option of Filete de Pez Manta with brussel sprouts or three hour Rioja Braised Beef Cheeks. “The first course, oyster escabeche is an aphrodisiac and are also very rich as well as the chocolate and truffles in our dessert dish,” Plonowski said.

Plonowski said everything was created using in a Spanish technique, but infusing modern techniques to make it something different for the guests.

“The beef cheeks are slow braised in red wine for three hours,” he said. “The cream underneath the chocolate truffles will be infused with rose pedals. Every preparation is designed to be luxurious.”
